Mustard Seeds: 1 tsp (for tempering)

Boiled Water: 1 cup

Step-by-step Preparation Method

Fry the Ginger: Heat enough coconut oil in a pan. Lower the flame and fry the finely chopped ginger until it turns a beautiful golden brown. Remove it from the pan and keep it aside.

Sauté the Aromatics: In the same remaining oil, add the chopped shallots, green chillies, and a few curry leaves. Sauté until the shallots turn reddish-brown, then scoop them out.

Grind the Base: Once cooled, take the fried ginger and sautéed shallots together and crush/powder them using a mixer grinder (do not add water). Keep this mix aside.

Prepare the Masala: In the same pan, splutter the mustard seeds. Turn down the heat and add red chilli powder, turmeric powder, a pinch of fenugreek, asafoetida, and curry leaves. Stir quickly until the raw smell goes away.

Simmer with Tamarind: Pour the prepared tamarind water and one cup of hot boiled water into the masala mix. Bring it to a slow boil.

Combine Everything: As the tamarind water bubbles up, add the crushed ginger-shallot mix into the pan. Stir thoroughly to blend the spices.

The Sweet Touch: When the curry starts thickening, add 4 tablespoons of grated jaggery and mix well.

Final Reduction: Let the curry simmer until the water reduces to your desired thick consistency, then turn off the stove.
